My favorite Christmas cookie recipe. (only one. hmm.) I love cookies.

Almost as I love Dean Winchesters...umm smile.

Spritz Cookies with Rum Glaze
(My belly just growled)

Ingredients:

Cookies:
1/2 cup sugar
1 cup butter, softened
1/4 tsp rum

1/4 tsp salt
1 egg
2 1/4 cups flour
   *food coloring if desired

Rum Glaze:
1/4 cup butter, melted
1 cup powdered sugar
1 tsp rum extract
1-2 tbs water

To make the cookies: Heat oven to 400ºF. Beat butter and sugar in large bowl with electric mixer on medium speed, or mix with spoon. Stir in flour, salt, egg, rum extract and a few drops of food color (if desired).

Place dough in cookie press. Form desired shapes on ungreased cookie sheet.
Bake 5 to 8 minutes or until set but not brown. Immediately remove from cookie sheet to wire rack.

To make the glaze: Stir all the glaze ingredients together until smooth and thin. Drizzle on cookies. You can put it in a plastic baggie, cut off a corner, and squeeze it out or just drizzle with a knife all crazy like. Voilà. Yummy goodness.

Makes 4-6 dozen, depending on the size of your cookies!

  2. I've made up a sugar-free jam-filled thumb-print teacake. It's officially become my favorite cookie so far. There was an iced orange sugar-free cookie I used to make, but I haven't made it in years, so I'm sure I've forgotten how. Thanks for sharing the great recipe. I collect recipes.
